Ingredients
  

  • ½ cup Unsalted butter
  • ½ cup White sugar
  • ½ cup Brown sugar
  • 1 large Egg
  • 1 ½ teaspoon Vanilla extract
  • 1 tablespoon Honey or molasses
  • 1 ¼ cup All-purpose flour
  • ½ teaspoon Cinnamon
  • ½ teaspoon Baking soda
  • ¼ teaspoon Salt
  • 1 cup Quick oats
  • ½ cup Old-fashioned oats

Instructions
 

  • Preheat the oven to 350F (180C) and line your baking sheets with parchment paper or silicone mats.
  • In a large bowl, beat the softened butter along with both sugars until the mixture is fluffy.
  • Add the egg, vanilla extract, and honey or molasses to the butter mixture and mix well until combined.
  • In a separate bowl, whisk together the all-purpose flour, cinnamon, baking soda, and salt.
  • Gradually combine the dry ingredients with the wet mixture and fold in the quick oats and old-fashioned oats.
  • Scoop the dough into balls, using about 1 to 1.5 tablespoons for each, and place them 2 inches apart on the prepared baking sheets.

Baking

  • Bake for 10-13 minutes or until the tops are just set.
  • Allow the cookies to cool on the baking sheet for at least 10 minutes before transferring to a wire rack.

Notes

  • Ensure the butter is softened for best results and use proper measuring techniques for flour.
  • Store cookies in an airtight container at room temperature for up to a week or freeze for longer storage.
