2cupsDiced rotisserie chicken or cooked chicken breasts
1cupLong grain white rice
12ouncesFrozen broccoli florets or fresh broccoli florets
10.5ouncesCream of mushroom soup
½cupSour cream
1 ½cupsShredded sharp cheddar cheese (divided)
1cupCrushed Corn Flakes
2tablespoonsButter (melted)
Instructions
Preheat your oven to 350°F.
Grease a 13x9 baking dish with cooking spray or butter.
In the greased baking dish, stir together the diced chicken, cooked rice, broccoli, cream of mushroom soup, sour cream, and 1 cup of shredded cheddar cheese until thoroughly combined.
Sprinkle the remaining ½ cup of shredded cheddar cheese over the casserole mixture.
Top it off with crushed Corn Flakes and drizzle melted butter over the top.
Bake the casserole for about 30-35 minutes until the top is golden and the cheese is bubbly. Let it cool slightly before serving.
Notes
Use leftover chicken for convenience, adjust cooking time if using fresh broccoli, and feel free to experiment with different types of cheese.
Assemble in advance and store covered in the refrigerator to save time before baking.
Allow the casserole to rest before serving to help it set.
