Season the diced chicken with salt and pepper.
Heat 1 teaspoon of sesame oil and 1 tablespoon of cooking oil in a large skillet over medium-high heat.
Add the chicken and sauté for about 6 minutes or until cooked through. Transfer the chicken to a plate and set aside.
In the same pan, add 1 teaspoon of sesame oil and the remaining tablespoon of cooking oil.
Add the diced onion, peas, and carrots, sautéing for 2 minutes.
Add the minced garlic and cook for another minute until fragrant.
Push the vegetables to one side of the pan.
Pour the beaten eggs into the other side and scramble until just set.
Combine Everything
Return the cooked chicken to the skillet along with the cooked rice.
Pour in the soy sauce, add the butter, and drizzle in the remaining teaspoon of sesame oil.
Toss everything to combine and cook for 2 more minutes or until heated through. Serve immediately.
