Ingredients
  

  • 3 cups Cooked shredded rotisserie chicken
  • 1 cup Sour cream
  • 2 cups Frozen mixed vegetables
  • 1 can (10.5 oz) Cream of mushroom soup
  • 1 can (10.5 oz) Cream of chicken soup
  • 1 cup Chicken broth
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • ¼ teaspoon Black pepper
  • ½ teaspoon Salt
  • 8 tablespoons Unsalted butter, melted
  • 1 box (6 oz) Chicken stuffing mix
  • 1 cup Shredded Colby Jack cheese

Instructions
 

  • Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking dish with nonstick cooking spray.
  • In a large bowl, combine sour cream, shredded chicken, mixed vegetables, cream of mushroom soup, cream of chicken soup, chicken broth, garlic powder, onion powder, salt, and black pepper. Mix until well blended.
  • Prepare the stovetop stuffing mix according to the package instructions. Let it cool slightly.
  • Spread the creamy chicken mixture evenly into the prepared baking dish.
  • Top with the cooled stuffing mix in an even layer.
  • Sprinkle shredded Colby Jack cheese over the stuffing.
  • Place the casserole in the preheated oven and bake for 45-50 minutes until heated through and the cheese is melted and stuffing is golden brown.
  • Let the casserole stand for about 10 minutes before serving.

Notes

  • Use leftover chicken for enhanced flavor.
  • Feel free to customize vegetables used.
  • Different cheeses can be combined for variety.
