Ingredients
  

  • 8 strips Turkey Bacon, chopped
  • 2 boneless, skinless Chicken Breasts
  • 8 cups Mixed Greens
  • ½ cup Feta Cheese, crumbled
  • 1½ cups Cherry Tomatoes, halved
  • 4 pieces Hard-Boiled Eggs, cut into wedges
  • 1 Red Onion, diced
  • 1 Avocado, diced
  • ½ cup Corn
  • ¼ cup Extra Virgin Olive Oil
  • 2 tablespoons Apple Cider Vinegar
  • 1 tablespoon Maple Syrup
  • 1 tablespoon Lemon Juice
  • ½ teaspoon Chili Flakes
  • 1 teaspoon Kosher Salt

Instructions
 

  • Combine the extra virgin olive oil, apple cider vinegar, maple syrup, lemon juice, chili flakes, and kosher salt in a jar. Shake well until everything is thoroughly mixed.
  • In a skillet over medium heat, cook the chopped turkey bacon until it’s crisp. Remove from the skillet and set aside.
  • Season the chicken breasts with kosher salt and pepper. Cook them in the same skillet for 5-7 minutes per side until fully cooked. Let the chicken rest briefly, then chop into bite-sized pieces.
  • Layer the mixed greens in a large serving bowl. Add the chopped chicken, crispy bacon, crumbled feta, cherry tomatoes, hard-boiled eggs, diced red onion, avocado, and corn.
  • Just before serving, drizzle the salad with the prepared dressing. Toss gently to coat all ingredients evenly.

Notes

  • Cook bacon first for maximum flavor infusion into the chicken.
  • Rest the chicken after cooking for juiciness.
  • Dice avocado just before serving to maintain freshness.
