Ingredients

  • 1 pound thick sliced beef bacon
  • 1 pound ground beef
  • 1 medium onion, diced
  • 1 small jalapeno, minced
  • 4 cloves garlic, minced
  • 1 tablespoon chili powder
  • 2 teaspoons salt
  • 1 teaspoon cracked pepper
  • 45 ounces canned baked beans
  • 15 ounces canned vegetarian beans
  • ¼ cup ketchup
  • 2 tablespoons barbecue sauce
  • 2 tablespoons brown sugar
  • 2 tablespoons yellow mustard
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon apple cider vinegar

Instructions

  • Preheat your oven to 350 degrees Fahrenheit.
  • Dice the bacon into bite-sized pieces.
  • Fry bacon in a 4-6 quart Dutch oven over medium heat until crisp. Remove with a slotted spoon and drain half the grease.
  • Add ground beef to the pot and cook until browned.
  • Add onion, jalapeno, and garlic halfway through cooking the beef.
  • Drain any excess fat from the pot.
  • Add half of the cooked bacon back to the pot with beef and sprinkle in chili powder, salt, and pepper. Stir to coat evenly.
  • Stir in canned beans, ketchup, barbecue sauce, brown sugar, mustard, Worcestershire sauce, and vinegar. Mix thoroughly.
  • Sprinkle remaining bacon on top and bake uncovered for 45 minutes.
  • Serve hot.

Notes

  • For the best flavor, monitor the bacon closely while frying and consider adjusting spice levels by removing jalapeno seeds.
