Bring a large saucepan of salted water to a boil. Toss the broccoli florets into the boiling water and blanch for about 3 minutes, or until they are slightly softened and bright green. Drain and rinse in cold water.
In a large mixing bowl, add the raw broccoli, matchstick carrots, and diced red onion. Mix well to combine.
In a separate small bowl, combine the mayonnaise, sugar, and apple cider vinegar. Mix well until the dressing is smooth.
