  • 1 tablespoon Vegetable Oil Helps to fry the ingredients evenly.

  • 1 cup Frozen Peas and Carrots Adds color and crunch.
  • 2 large Eggs Adds richness and protein to the dish.
  • ½ teaspoon Sesame Oil Offers a nutty flavor that enhances the dish.
  • 3 tablespoons Soy Sauce Provides a salty, umami taste.
  • Chopped Green Onions, for garnish They add freshness and bite.
  • Cilantro, Optional, for garnish Adds a fresh, herbal note.

Instructions
 

Preparation

  • In a large skillet or wok, preheat the vegetable oil over medium heat. Add the chopped onion and minced garlic, cooking them until the onions are soft (about 2 to 3 minutes). Stir occasionally to keep the garlic from burning.
  • Introduce the frozen peas and carrots to the skillet. Cook for about 1 to 2 minutes until they are partially thawed.
  • Turn the heat up to medium-high and add the cooked rice. Cook the rice for another 2 to 3 minutes until it is nice and hot and starts to brown slightly.
  • Reduce heat and push the rice to the sides of the pan. Make a small hole in the center and crack the eggs into the middle. Scramble them gently; once they are cooked, stir them into the rice.
  • Mix the soy sauce and sesame oil together, then pour this mixture over the rice. Stir until the rice is evenly coated with the sauce.
  • Top the fried rice with chopped green onions and cilantro if desired. Serve hot and enjoy!

Notes

Use cold, day-old rice for the best texture. Avoid overcrowding the skillet and adjust seasonings according to taste.
