Ingredients
  

  • 4-5 cups Rolled Old Fashioned Oats
  • ⅔ cup Coconut Oil or Canola Oil, melted
  • ½ cup Honey
  • ¼ cup Light Brown Sugar or Maple Syrup
  • 1 teaspoon Vanilla Extract
  • ½ teaspoon Salt
  • ¾ teaspoon Ground Cinnamon
  • ½ cup Coconut Flakes or Chips
  • 1 cup Chopped Nuts (cashews, almonds, or pecans)
  • Pumpkin Seeds, Dried Fruit, Chocolate Chips

Instructions
 

  • Preheat your oven to 300°F (150°C). Line or grease a 15×18 jelly roll pan.
  • In a large bowl, mix the rolled oats, melted coconut oil, honey, brown sugar, vanilla extract, salt, cinnamon, coconut, and nuts until well combined. If you see any remaining liquid, consider adding ½ cup more oats.
  • Evenly spread the granola mixture onto the prepared pan.
  • Bake the granola for 10 minutes. Take it out, stir, and press it down with a spatula.
  • Return it to the oven for another 7-10 minutes for chewy granola, or longer if you prefer it crunchier, stirring again if needed.
  • Remove from the oven and let the granola cool completely. As it cools, it will harden.
  • Store your homemade granola in an airtight container.

Notes

  • Avoid overbaking to prevent burning.
  • Adjust sweetness to taste.
  • Add dried fruit after baking to prevent hardening.
