Ingredients
  

  • 450 g Cooked pasta
  • 2 Cucumbers
  • 15 Cherry tomatoes
  • ½ cup Red onion
  • 150 g Feta cheese
  • 1 Bell pepper
  • ¼ cup Fresh parsley
  • ⅔ cup Kalamata olives
  • ½ cup Olive oil
  • ¼ cup Red wine vinegar
  • 1 tablespoon Dijon mustard
  • 2 Garlic cloves
  • ½ teaspoon Dried oregano
  • ½ teaspoon Kosher salt
  • ½ teaspoon Black pepper
  • 1 tablespoon Lemon juice

Instructions
 

  • Mix olive oil, red wine vinegar, lemon juice, minced garlic, dried oregano, salt, and black pepper in a jar or medium mixing bowl. Shake or whisk well until fully combined.
  • Bring a large pot of salted water to a boil and add your pasta. Cook it according to the package instructions, then drain and rinse it with cold water to stop the cooking process.
  • In a large bowl, add the cooked pasta, diced cucumbers, halved cherry tomatoes, sliced kalamata olives, diced red onion, chopped parsley, diced bell pepper, and crumbled feta cheese.
  • Pour the Greek salad dressing over the pasta mixture. Stir gently with a wooden spoon until everything is evenly coated. Serve and enjoy!

Notes

  • Chill Before Serving – Allow the salad to chill in the fridge for at least an hour before serving.
  • This time lets the flavors meld beautifully for a more delicious experience.
  • Adjust the Acid and use seasonal vegetables for the freshest flavors.
