Ingredients
  

  • 6 - 8 cups Chopped romaine lettuce
  • ½ cup Thinly sliced red onion
  • ½ cup Grape or cherry tomatoes, halved
  • ½ cup Diced cucumber
  • ½ cup Chopped green bell pepper
  • ½ cup Pitted Kalamata olives
  • ½ cup Cubed feta cheese
  • ¼ cup Extra virgin olive oil
  • ⅛ cup Red wine vinegar
  • 1 tablespoon Lemon juice
  • 1 tablespoon Honey
  • 1 teaspoon Dried oregano
  • 1 teaspoon Dijon mustard
  • ¼ teaspoon Kosher salt
  • ¼ teaspoon Black pepper

Instructions
 

  • Start by washing and chopping all your vegetables. Cut the romaine lettuce into bite-sized pieces, slice the red onion thinly, and dice the cucumber. Halve the cherry or grape tomatoes, and chop the green bell pepper into small pieces. Add everything to a large mixing bowl.
  • Next, add the Kalamata olives and cubed feta cheese to the bowl of vegetables. Feel free to adjust the amount of olives and feta based on your preference for saltiness and flavor. Gently toss everything together to distribute the ingredients evenly.
  • In a small mixing bowl, combine the extra virgin olive oil, red wine vinegar, lemon juice, honey, dried oregano, Dijon mustard, kosher salt, and black pepper. Whisk the ingredients together until the dressing is smooth and well combined. If you prefer, you can also place everything in a jar and shake it until mixed.
  • Pour the dressing over the salad mixture. Gently toss everything together to ensure the dressing coats the vegetables and cheese evenly. If you prefer, you can serve the dressing on the side to keep the salad crisper.
  • Your Greek salad is ready to serve! It’s perfect as a light meal or a fresh side dish. Enjoy the bright flavors and the textures of the various ingredients.
