Ingredients
  

  • ½ head medium head of cabbage, chopped
  • 3 Persian cucumbers, diced (or 1 English cucumber)
  • 1 bunch green onions, sliced
  • 1 cup fresh basil
  • 1 cup baby spinach leaves
  • ¼ cup Greek yogurt
  • 2 cloves garlic
  • 1 small shallot
  • ⅓ cup Parmesan cheese, grated
  • ½ cup cashews or nuts of choice
  • 2 lemons, juiced
  • 2 teaspoons rice wine vinegar
  • ¼ cup extra virgin olive oil
  • 1 teaspoon salt

Instructions
 

  • Wash and prepare all the salad ingredients. Place the chopped cabbage, diced cucumbers, and sliced green onions into a large mixing bowl.
  • In a blender, combine the basil, spinach, Greek yogurt, garlic, shallot, Parmesan cheese, cashews, lemon juice, rice wine vinegar, olive oil, and salt. Blend until smooth and creamy.
  • Gently toss the salad to ensure all ingredients are well-coated with the dressing, taking care not to crush the vegetables.
  • Serve immediately and enjoy your fresh Green Goddess Salad, bursting with vibrant and refreshing flavors.
