- 0.5 head Cabbage, cored and shredded Sturdy,
- 1 large Carrot, julienned
- 2-3 small Cucumbers, julienned
- 1 medium Bell Pepper, julienned
- 8 Radishes, julienned
- 1-2 stalks Celery, thinly sliced
- 1 Apple, julienned
- ¼ cup Fresh Herbs (green onions, dill, parsley), minced
- 4-5 tablespoons Olive Oil
- 1 tablespoon Apple Cider Vinegar
- 1 teaspoon Sugar or Honey Optional for balance
- to taste Salt and Pepper
Slice the cabbage into thin strips and julienne the carrot, cucumbers, bell pepper, and radishes. Thinly slice the celery to add texture and flavor.
If making the salad right away, julienne the apple. If prepping in advance, submerge the apple slices in water with lemon juice to prevent browning.
Combine all prepared vegetables in a large bowl, mixing gently until evenly combined.
Add salt, pepper, and optional sugar. Pour in the olive oil and apple cider vinegar. Toss well to coat every piece evenly with the dressing.
Refrigerate the salad for at least 30 minutes. Serve it chilled or at room temperature.
