Heat the olive oil in a large pan over medium-high heat until it shimmers.
Season the salmon fillets with salt and pepper to taste and place the salmon skin side up in the pan.
Cook the salmon for 4-5 minutes per side until cooked through and opaque.
Remove the salmon from the pan and cover it with foil to keep warm.
Add the minced garlic to the pan and sauté for about 30 seconds, stirring gently.
Add water, soy sauce, and honey to the pan. Bring to a simmer.
In a small bowl, whisk together cornstarch with 1 tablespoon of cold water, then pour into the pan while whisking.
Cook for about 1 minute until the sauce thickens.
Return the cooked salmon to the pan, spooning the sauce over the top.
Serve sprinkled with chopped parsley and lemon wedges if desired.
Adjust the sweetness by reducing honey to 2 tablespoons if desired.
