Ingredients
  

  • 5 to 6 tablespoons Lemon Juice
  • 2 cloves Garlic, minced or grated
  • 1 ½ teaspoons Sea Salt
  • 3 cups Chickpeas, cooked (or two 15 oz cans; reserve 2 tablespoons for garnish)
  • 6 to 8 tablespoons Ice Water
  • ⅔ cup Tahini
  • ½ teaspoon Cumin
  • ¼ cup Extra Virgin Olive Oil
  • 1 tablespoon Parsley, finely chopped, for serving
  • Ground Paprika

Instructions
 

  • In a food processor, combine 5 tablespoons of lemon juice, 1 ½ teaspoons of salt, and grated garlic. Blend and let the mixture rest for 10 minutes.
  • Add the tahini to the processor and blend until thick and smooth.
  • Add ice water gradually while blending, one tablespoon at a time, adjusting to achieve a smooth and creamy texture.
  • Incorporate cooked and drained chickpeas, cumin, and olive oil. Blend until creamy and smooth, about 5 minutes.
  • Taste and adjust seasoning with additional salt, cumin, or lemon juice as necessary.
  • Transfer to a bowl, garnish with reserved chickpeas, drizzle with olive oil, and sprinkle with parsley and paprika before serving.

Notes

  • To achieve perfect creaminess, blend longer.
  • Use freshly cooked chickpeas for a better flavor and texture.
  • Gradually adding ice water lightens the hummus for an airy texture.
