Ingredients
  

  • 2 cups Vegetable stock
  • 1 cup Quinoa
  • 16 ounces Chickpeas, rinsed and drained
  • 1 cup Cucumber, small diced
  • ¾ cup Red onion, small diced Adds sharp
  • ¾ cup Pistachio nuts, shelled & roasted, chopped
  • 1 cup Feta cheese, crumbled
  • 3 tablespoons Fresh parsley, chopped
  • 3 tablespoons Fresh mint, chopped
  • ⅓ cup Lemon juice, freshly squeezed
  • ⅓ cup Extra virgin olive oil
  • 1 tablespoon Honey
  • ½ teaspoon Salt
  • ¼ teaspoon Black pepper

Instructions
 

  • In a medium saucepan, bring the vegetable stock to a boil over medium-high heat.
  • Add the quinoa, stir, cover, and reduce the heat to low. Cook for 15 minutes.
  • Remove from heat and let sit for 5 minutes with the lid on. Fluff quinoa with a fork and transfer to a large bowl to cool to room temperature.
  • Refrigerate for 2 hours or overnight until chilled.
  • In the large bowl with cooled quinoa, add the chickpeas, diced cucumber, diced red onion, pistachio nuts, feta cheese, parsley, and mint.
  • In a small jar, combine lemon juice, olive oil, honey, salt, and black pepper. Shake well to emulsify.
  • Pour the dressing over the salad ingredients and gently toss to combine.
  • Serve in a bowl.

Notes

  • Chill quinoa before mixing to avoid wilting fresh salad ingredients.
  • Use fresh herbs for vibrant flavor.
  • Adjust honey for sweetness.
  • Toast pistachios for enhanced flavor.
  • Let sit after tossing for flavors to meld.
