Ingredients
  

  • 2 racks Beef ribs About 5-6 pounds in total.
  • 1 tablespoon Ground cumin
  • 2 tablespoons Paprika
  • 2 tablespoons Garlic powder
  • 2 tablespoons Onion powder
  • 1 tablespoon Chili powder
  • ¼ cup Brown sugar Packed.
  • 2 tablespoons Smoked sea salt
  • 1 teaspoon Pepper (or cayenne to taste)
  • 1.5-2 cups Ketchup Base of the barbecue sauce.
  • ⅓-1/2 cup Molasses For depth of flavor.
  • 2 tablespoons Apple cider vinegar
  • 1 tablespoon Hot sauce Optional.
  • to taste Salt

Optional BBQ Sauce Ingredients

  • ¼-1/2 teaspoon Liquid smoke For extra smoky flavor.
  • 2-4 tablespoons Yellow or Dijon mustard For a zesty twist.
  • 2-4 teaspoons Garlic powder
  • 2-4 teaspoons Onion powder
  • 2-4 tablespoons Chili powder
  • 2-4 tablespoons Worcestershire sauce
  • 1-2 pieces Jalapeño chiles Seeded and minced.
  • 2-4 teaspoons Chipotle chile in adobo Minced.
  • 2-4 teaspoons Crushed red pepper flakes

Instructions
 

  • Prepare a large rimmed baking sheet with aluminum foil.
  • Remove the membrane from the back of the ribs, rinse and dry them.
  • Preheat your oven to 275°F (135°C).
  • In a small bowl, combine the ground cumin, paprika, garlic powder, onion powder, chili powder, brown sugar, smoked sea salt, and pepper. Mix well and rub this blend over the ribs.
  • Wrap each rack of ribs tightly in tinfoil, bony side up.
  • Bake the wrapped ribs in the preheated oven for about 3 to 4 hours, checking for tenderness after 3 hours.
  • Once cooked, switch the oven to broil, remove the tinfoil, and place the ribs bony side down on the baking sheet.
  • Generously coat the ribs with your prepared barbecue sauce and broil until bubbling and browning.
  • Optionally, you can add more sauce and broil again, watching closely to prevent burning.
  • Cut the ribs into portions and serve.

Notes

  • Use a meat thermometer to check for doneness; ideal temperature is around 203°F.
  • Allow the ribs to rest a few minutes after broiling to enhance flavor.
