Ingredients
  

  • 12 ounces Raw Velveted Protein (sliced chicken, beef, shrimp; alternatively 8 ounces of pre-cooked protein)
  • 2 tablespoons Hot Chicken Stock or Water
  • 1.5 tablespoons Oyster Sauce
  • 1.5 tablespoons Light Soy Sauce
  • 1 tablespoon Dark Soy Sauce
  • 0.5 teaspoon Salt
  • 0.5 teaspoon Sesame Oil
  • 0.25 teaspoon Sugar
  • 0.125 teaspoon White Pepper
  • 1 pound Fresh Lo Mein Noodles
  • 2 cloves Garlic (minced)
  • 1 cup Fresh Mushrooms (sliced)
  • 0.75 cup Carrot (julienned)
  • 0.5 cup Bamboo Shoots (julienned or sliced)
  • 0.5 cup Water Chestnuts (sliced)
  • 3.5 cups Napa Cabbage (shredded)
  • 1 cup Snow Peas
  • 2.5 cups Mung Bean Sprouts
  • 2 tablespoons Neutral Oil
  • 3 tablespoon Vegetable Broth
  • 2 Scallions (julienned) For garnish and mild onion flavor.

Instructions
 

  • If using raw meat, velvet it by lightly coating with cornstarch. If you have pre-cooked protein, slice thinly.
  • Combine hot stock, oyster sauce, light and dark soy sauces, salt, sesame oil, sugar, and white pepper in a bowl. Mix well.
  • Boil uncooked lo mein noodles until they are al dente. Drain and rinse in cool water. If using pre-cooked noodles, rinse in hot water before using.
  • Mince garlic and slice mushrooms, carrots, bamboo shoots, and water chestnuts. Set aside for cooking.
  • Heat a wok over medium-high heat and add oil. Sear raw protein until about 80% cooked, then remove from the wok.
  • Add garlic, mushrooms, carrots, bamboo shoots, and water chestnuts to the wok. Stir-fry for about one minute to combine flavors.
  • Pour Vegetable Broth around the edges of the wok, add napa cabbage and cooked protein. Stir-fry for 20 seconds.
  • Add lo mein noodles and the sauce to the wok. Stir-fry for 1–2 minutes until the sauce thoroughly coats the ingredients.
  • If noodles are sticky, add a bit of hot water to loosen them up and continue to stir-fry.
  • Toss in snow peas, bean sprouts, and any cooked protein. Stir-fry everything together until well mixed.
  • Adjust seasoning if necessary. Serve immediately, optionally with chili oil or your favorite hot sauce.

Notes

  • Velvet with care for tender protein, ensure noodles are al dente, add Shaoxing wine for authenticity, avoid overcooking veggies, taste sauce before adding more.
