Ingredients
  

  • 1.5 cups Black Beans
  • 1 cup Sweet Corn
  • 1 Avocado, diced
  • ½ Red Onion, chopped finely
  • 2 Tomatoes, chopped into small cubes
  • 1 Red Bell Pepper, chopped into small cubes
  • ½ cup Cilantro, chopped
  • 1 clove Garlic, minced
  • 1 Lime Juice, from 1 lime
  • ½ teaspoon Salt
  • ¼ teaspoon Chili Powder
  • 2 tablespoons Olive Oil
  • ½ cup Cotija or Feta Cheese, crumbled on top

Instructions
 

  • Rinse and strain the black beans thoroughly. If using frozen or fresh corn, cook according to package instructions or until tender, then strain and set aside.
  • Finely chop the red onion and dice the avocado, tomatoes, and red bell pepper into small cubes.
  • In a large mixing bowl, combine all the prepared ingredients: black beans, corn, avocado, red onion, tomatoes, red bell pepper, cilantro, garlic, lime juice, salt, chili powder, and olive oil.
  • Using a wooden spoon or tongs, gently toss all the ingredients together until evenly mixed and coated with dressing.
  • Sprinkle the crumbled Cotija or feta cheese on top of the salad or mix it through for a more integrated flavor.
  • Serve this vibrant salad as a refreshing side or a standalone meal for a light and nutritious option.

  • Fresh corn is recommended for added crunch and sweetness.
  • Let salad chill for 30 minutes before serving to enhance flavor blending.
  • Cheese alternatives include queso fresco for a milder taste.
