Instructions
Preheat your oven to 375°F. Use nonstick cooking spray to coat a 9x13 baking dish.
Add all the 'Peach' ingredients to your prepared baking dish. Toss them well to combine and spread the mixture into an even layer. Bake for 15 minutes.
While the peaches are baking, combine flour, sugar, baking powder, and salt in a bowl or food processor. Add cubed butter and process or cut in until the mixture appears as coarse crumbs.
Whisk the vanilla extract into your buttermilk. Pour this mixture into the flour-butter mixture and pulse until it becomes moistened.
Remove the baked peaches from the oven. With a spoon, drop the topping mixture over the peaches. Sprinkle the top with raw sugar and ground cinnamon.
Place the dish back in the oven and bake for an additional 45-55 minutes until the topping is golden and the peach filling is thick and bubbling.
Notes
For best results, choose ripe but firm peaches, cut them uniformly for even cooking, and keep butter cold for a flaky topping.
