Ingredients
  

  • 2 cans 20 oz cans of pineapple chunks
  • ⅓ cup granulated sugar
  • 5 tablespoons all-purpose flour
  • 1 cup shredded sharp cheddar cheese
  • ¼ cup melted butter
  • 32 crackers Ritz crackers, crushed

Instructions
 

  • Preheat the oven to 350 degrees Fahrenheit.
  • In a medium bowl, mix the granulated sugar, all-purpose flour, and reserved pineapple juice until smooth.
  • Add the drained pineapple chunks and toss until coated. Spoon this mixture into an 8x8 inch casserole dish and sprinkle shredded cheddar cheese evenly over the top.
  • In a small bowl, combine melted butter with crushed Ritz crackers. Mix until evenly coated.
  • Sprinkle the cracker mixture evenly over the casserole.
  • Bake for 30 minutes until the topping is golden brown and bubbly.
  • Serve hot or allow it to sit for up to 30 minutes before serving.

Notes

  • For best results, use freshly shredded cheddar cheese for better melting and richer flavor.
  • You may also try other buttery cracker options for the topping.
