Ingredients
  

  • 1 pound Smoked sausage
  • 2 pounds Red potatoes
  • 1 large Onion
  • 1 piece Red bell pepper
  • 2 cloves Garlic
  • ¼ cup Avocado oil, divided
  • 1 teaspoon Dried thyme
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • ¼ teaspoon Black pepper
  • 1 tablespoon Fresh rosemary, chopped
  • to taste Fresh parsley, chopped Optional, for garnish.

Instructions
 

  • In a large skillet, heat 2 tablespoons of avocado oil over medium-high heat.
  • Add the sliced sausage and cook for 4-5 minutes until browned. Remove and set aside.
  • In the same skillet, add the remaining avocado oil and heat it up.
  • Add potato cubes and cook for 5-7 minutes until golden and brown.
  • Add sliced onion and red bell pepper to the potatoes and cook for another 5-7 minutes until softened.
  • Stir in the minced garlic, paprika, salt, pepper, and thyme.
  • Return the cooked sausage to the skillet, mixing it with the potatoes and vegetables.
  • Reduce heat to medium-low and cook for another 5-7 minutes until potatoes are tender and crispy.
  • Sprinkle fresh rosemary and gently stir.
  • Garnish with chopped fresh parsley if desired.
