Ingredients
  

  • 2 22 cans baked beans
  • 2 slices beef bacon
  • 1 small sweet onion
  • 1 medium bell pepper
  • 2 cloves garlic
  • 1 tablespoon smoked paprika
  • ¼ to ½ teaspoon chipotle chili powder
  • ¼ teaspoon salt
  • ¼ teaspoon freshly cracked black pepper
  • 2 tablespoons apple cider vinegar
  • 2 tablespoons BBQ sauce
  • 2 tablespoons ketchup
  • 1 tablespoon dijon mustard
  • 1 tablespoon brown sugar
  • 2 slices bacon (for topping) Optional, for extra flavor.

Instructions
 

  • Preheat the oven to 400 degrees F.
  • Heat a large skillet over medium-low heat and add the diced bacon. Cook until browned and crisp.
  • Stir in the diced onion, bell pepper, and minced garlic. Cook for about 5 minutes until the onion is soft.
  • Sprinkle in the smoked paprika, chipotle chili powder, salt, and pepper. Cook for 1 to 2 minutes.
  • Stir in the apple cider vinegar, BBQ sauce, ketchup, dijon mustard, and brown sugar. Bring to a gentle boil.
  • Mix in the two cans of baked beans and stir until combined.
  • Transfer to an oven-safe dish if necessary and bake for 30 to 35 minutes.
  • Allow to cool slightly before serving.

Notes

  • You can prepare these a day in advance and reheat before serving.
  • Adjust chili powder for spice level and consider toppings like fresh herbs or jalapeños.
