Ingredients
  

  • 10 oz. Fresh Baby Spinach
  • 14 oz. Canned Artichoke Hearts
  • 8 oz. Cream Cheese
  • 1 cup Sour Cream
  • 1.5 cups Shredded Mozzarella Cheese
  • 0.5 cup Shredded Parmesan Cheese
  • 2 tablespoons Garlic Puree
  • 3 tablespoons Dried Minced Onion
  • 0.5 teaspoon Black Pepper
  • 0.5 teaspoon Salt

Instructions
 

  • Chop the fresh baby spinach, removing any thick stems.
  • Lightly grease the inside of the Crock Pot with cooking spray.
  • Add chopped spinach into the greased Crock Pot.
  • Incorporate drained and chopped artichoke hearts with the spinach.
  • Melt cream cheese, sour cream, mozzarella, and parmesan cheeses into the mixture.
  • Season with garlic puree, dried minced onion, salt, and pepper. Stir well.
  • Cover and cook on High for 1 hour and 30 minutes.
  • Stir halfway through to break up any large chunks of cream cheese.
  • After 1 hour, stir again and continue cooking for an additional 30 minutes.
  • Once done, stir the dip and serve warm.

Notes

  • For enhanced flavor, try mixing in sautéed garlic with the spinach.
  • Check the dip’s texture around the 1-hour mark to avoid overheating.
  • It can be prepared a day in advance and reheated in the Crock Pot.
  • Ensure to mix cream cheese thoroughly to avoid lumps.
  • Pairs well with tortilla chips, baguette, or fresh veggies.
