Sweet and Sour Chicken Recipe

Ingredients
  

  • 1.5 pounds Chicken breasts, cut into 1-inch chunks
  • ½ cup Cornstarch
  • 2 units Eggs, beaten
  • ¼ cup Flour
  • 1 cup Pineapple chunks, cut into 1-inch pieces
  • 1 unit Red bell pepper, cut into 1-inch chunks
  • 1 unit Green bell pepper, cut into 1-inch chunks
  • ½ unit Yellow onion, cut into 1-inch chunks
  • ½ cup Sugar
  • ¼ cup Brown sugar
  • ½ cup Apple cider vinegar
  • ⅓ cup Ketchup
  • 4 teaspoons Reduced sodium soy sauce
  • 2 cloves Garlic, minced
  • Vegetable oil For frying

Instructions
 

  • In a small bowl, whisk together the sugar, brown sugar, apple cider vinegar, ketchup, soy sauce, and minced garlic to make the sauce. Set aside.
  • Pour enough vegetable oil into a Dutch oven or frying pan to fill about 1.5 inches from the bottom. Preheat on medium-high heat until shimmering.

Coat and Fry Chicken

  • Add cornstarch to a large ziplock bag and add the chicken pieces. Shake until coated.
  • Dip each piece of chicken into the beaten eggs, then coat with flour. Fry in batches in the hot oil for 2-3 minutes until golden and crispy.

Cook Vegetables and Combine

  • Remove all but a tablespoon of oil from the pan. Add the bell peppers, onion, and pineapple; cook for 1-2 minutes until crisp-tender.
  • Add cooked chicken and sauce to the pan, stirring until the sauce thickens and bubbles. Serve immediately.

Notes

  • Use fresh vegetables for the best results.
  • Monitor oil temperature and don’t overcrowd the pan for crispy chicken.
  • Experiment with flavors and variations to your liking.
