Combine ⅓ cup sour cream, ⅓ cup salsa, and ½ tablespoon taco seasoning in a bowl. Mix until smooth and set aside.
Slice the avocado in half, remove the pit, and mash it in a bowl, mixing in lime juice and salt.
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the ground beef and cook until browned.
Once the beef is cooked, drain any excess grease. Stir in the taco seasoning and remaining salsa, then warm the mixture.
In serving bowls, add a generous portion of chopped lettuce as the base.
Spoon the warm meat mixture over the lettuce, then layer with tomatoes, jalapeños, black beans, corn, olives, onions, cheese, and avocado.
Top each bowl with a dollop of sour cream and drizzle with the prepared dressing. Sprinkle tortilla chips on top for added crunch.
