Ingredients
  

  • 3 cups Egg noodles
  • 1 tablespoon Butter
  • 1 small Onion, diced
  • 2 ribs Celery, diced
  • ⅔ cup Frozen peas, thawed
  • 1 can (5 oz) Tuna, drained
  • 1 can (10.5 oz) Condensed cream of mushroom soup
  • ⅓ cup Milk
  • 1 cup Cheddar cheese, shredded
  • 1 tablespoon Fresh or dried parsley, chopped
  • ½ cup Panko bread crumbs
  • 1 tablespoon Melted butter
  • ½ cup Cheddar cheese (for topping), shredded
  • 1 tablespoon Fresh or dried parsley (for topping), chopped

Instructions
 

  • Preheat your oven to 425°F.
  • Combine panko bread crumbs, melted butter, cheddar cheese, and parsley in a bowl, mix well and set aside.
  • Boil egg noodles until al dente, drain and rinse under cold water.
  • In a skillet, melt butter over medium heat, add onion and celery and cook for about 5-7 minutes until tender.
  • In a large bowl, combine drained noodles, sautéed onion and celery, thawed peas, cream of mushroom soup, milk, cheddar cheese, tuna, and parsley. Stir well.
  • Spread the noodle mixture evenly into a 2-quart casserole dish.
  • Sprinkle the crumb topping over the noodle mixture.
  • Bake for 18-20 minutes or until the casserole is bubbly and the top is golden brown.

Notes

  • Cook noodles al dente, use quality tuna for best flavor, and feel free to add more vegetables for nutrition.
  • Store leftovers in an airtight container in the fridge.
